Limoux terroir is characterized by a Mediterranean sunshine moderate by the altitude and the temperate damp climate due to the oceanic flows.The grape ripens slowly and maintains the balance between fruity flavours and freshness necessary to elaborate a sparkling wine.
Our story dates back to 1531 when Benedictine monks discovered the secret of the 2nd fermentation in the bottle. The Blanquette de Limoux was born in the small Abbey of St Hilaire, near Limoux, and became one of the first AOC Appellation of France. This wine is the result of extensive and qualitative research undertaken in the vineyard and in our winery by the winegrowers and oenologists of Aimery Sieur d’Arques. - Exclusively hand-picked. - 2nd fermentation – The prise de mousse takes place slowly in the bottle. - Ageing on second fermentation lees during 18 months.
Blend : 90% Mauzac, 5% Chenin, 5% Chardonnay.
Mauzac is a rare grape variety exclusive to the Limoux terroir, characterized by its peach, pear and green apple aromas. These cuvees are produced according to a rigorous terroir selection in the Limoux Appellation. Grapes are selected from very precise vineyard sites identified for the outstanding quality of their soil and sub-soil.
TASTING NOTES Pale yellow colour with green tints. Fine and lingering sparkling with delicate foam. A fresh nose with notes of white flowers and white fleshed-fruits aromas. A lively and an unctuous palate with notes of dried fruits. The wine develops grilled and toasted aromas on the finish.
