The vineyard is divided into 35 blocks and planted with 13 grape varieties—from classic Bordeaux to Syrah, Gamay, Chardonnay, and aromatic whites—offering a dynamic range of complexity and style. Its prized clay-loam and gravelly limestone soils add depth and character. Winemaker Dean Stoyka, a Niagara native raised among vines and barrels, now leads the cellar with a passion for innovation, sustainability, and expressive, site-driven wines.
Made using the ancestral method, this is the oldest method of producing sparkling wine — the wine is bottled before fermentation finishes, trapping natural CO₂ in the bottle, creating a lightly sparkling, often cloudy, and very expressive wine.
TASTING NOTES FROM THE WINERY
Refreshing with fine effervescence. Almost tropical fruit aromas of banana candy, lemon curd, jasmine, vanilla, and cream. Touches of bread dough, clove, white pepper, and green cardamom. The fine mousse dissipates quickly, but adds lovely creaminess to the palate. Fruity, but dry, with lingering yellow grapefruit peel in finish.
