Tasting Notes: Ethereal notes together with violet, forest floor, licorice, plum, spices and tobacco. Lively acidity and strong yet silky tannins. Pleasant final, long, dry and persistent. In traditional combination with meat dishes, but also with pecorino cheese, charcuterie and olive oil.
Corte Pavone was converted in the early 1970’s to organic/biodynamic farming by owner and a bio-pioneer, Rainer Loacker.
Located in the Casanuova area of Montalcino 1,500 ft. above sea level, one of the loftiest positions in the zone. It is a unique estate in that the winemaker, Hayo Loacker, uses Slavonian casks, French Barrique and Austrian oak barrels to age its wines. In both the cultivation of the grapes and in the vinification process, natural and biological practices are adhered to, making Corte Pavone 100% organic.
